GRAPE VARIETY:
100% Cabernet Sauvignon proprietor's single vineyard grapes, from
ungrafted selected clones of pre-philloxera French rootstock.
HARVEST:
April 5th to April 18th, 2003.
100% Hand-picked in 18 Kg. boxes and carried to the winery
immediately after cutting. Carefully selected before processing.
VINIFICATION:
• Fermented in 30.000 liter oak tanks for 7 days at 25-28ºC controlled
temperature to dryness.
• Extended maceration for additional 10 days.
• 100% malolactic fermentation.
• Stored in temperature controlled stainless steel tanks through
bottling.
